But no matter what you call it, whether it’s a cake, a loaf, or a classic gingerbread, this spiced dessert will surely become a favorite!

This recipe is a vintage recipe that has stood the test of time. It’s a classic hot water gingerbread recipe that’s been around for generations. In fact, I’ve been making this same recipe for many years now, and it’s a wonderful reminder of the simple and satisfying desserts of the past. The warm ginger flavor and rich texture are what make this cake so comforting and delightful. Humble ingredients, no fuss—just pure, satisfying flavor.

Ingredients for Gingerbread:

The ingredients are basics that most of us have in our kitchens, but there are a couple of things worth mentioning to ensure the best results:

  • Molasses: This is the traditional sweetener used in gingerbread. You could substitute it with mild-flavored honey or sorghum for a slightly different twist, but molasses really gives it that signature depth of flavor.
  • Ground Ginger, Cinnamon, and Cloves: Fresh spices make all the difference! If your ginger has been sitting in your pantry for a while, it might be time for a refresh, as older spices lose their potency. Fresh spices will give your cake that perfect spiced kick.
  • Hot Water: You don’t need boiling water—just hot tap water or water heated in the microwave until it’s piping hot but not quite boiling.

  • Be sure to keep an eye on your cake as it bakes. In my oven, it usually takes around 40 minutes, but every oven is different. You want to avoid burning your gingerbread, so start checking around 35 minutes to ensure it doesn’t over-bake.
  • Once the loaf has cooled completely, dust it with powdered sugar before serving. If you’d like, you can also make a glaze with powdered sugar and milk or lemon juice to drizzle over the cake.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon salt
  • 1 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground ginger
  • 1/4 teaspoon ground cloves
  • 1/2 cup butter, melted and cooled
  • 1/2 cup packed brown sugar
  • 1 egg, room temperature
  • 1 cup molasses
  • 1 cup hot water

Instructions

  1. Heat oven to 350 degrees Fahrenheit. Grease a 9×9 inch baking dish and set aside while you prepare the gingerbread batter.
  2. To a mixing bowl, add the flour, baking soda, salt, cinnamon, ginger, and cloves. Whisk to combine.
  3. In a separate large bowl, mix the butter, brown sugar, egg, and molasses until well combined.
  4. Gradually mix the dry ingredients into the butter mixture. Add the hot water and mix until well combined. It’s normal if the batter seems thin and lumpy. It’s OK to leave some lumps.
  5. Pour the gingerbread batter into the prepared pan. Shake the pan gently to level the batter, then tap the pan gently on the countertop to remove any bubbles.
  6. Bake for 40-50 minutes, or until the edges begin to shrink away from the pan, and a toothpick inserted into the center of the bread comes out clean. Watch carefully while baking and don’t overbake.
  7. Allow the bread to cool fully before slicing. Dust with powdered sugar or top with whipped cream.

    I used black molasses and it turned out gorgeous and tasty. I’ve never tried full on gingerbread before so it’s a welcome change from over crispy cookies. Thanks for the great recipe! It’s a keeper!
