White Chocolate Chip Cookies with Cranberries

Description

These White Chocolate Chip Cookies with Cranberries are sweet and buttery with a hint of tartness.


Ingredients

  • 1 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup butter, softened
  • 3/4 cup sugar
  • 1/2 cup brown sugar (unpacked)
  • 1 egg
  • 2 teaspoons vanilla extract
  • 10 ounces white chocolate chip cookies (or white chocolate bar, coarsely chopped for chunk cookies)
  • 1 cup dried cranberries

Instructions

  1. In a mixing bowl, whisk together flour, baking soda, and salt.
  2. In a separate mixing bowl, using a stand mixer or electric hand mixer, cream together butter, sugar, and brown sugar until light and fluffy.
  3. Beat in egg and vanilla.
  4. Add flour mixture to creamed butter mixture and mix until combined. Stir in white chocolate chips and cranberries.
  5. Chill dough in the refrigerator for 1 hour.
  6. Heat oven to 350 degrees Fahrenheit. Line a baking sheet with parchment paper or a silicone baking mat.
  7. For each cookie, use a spoon or cookie scoop to scoop out dough (about 1 ½ – 2 tablespoons.) Lightly roll the dough to form a ball and place it on the baking sheet.
  8. Bake for 12-14 minutes until cookies are lightly browned around the edges. Remove cookies from the oven and let stand for 5 minutes before transferring to a wire rack to cool.
