Quick and easy no-bake butterscotch haystack cookies made with just a handful of simple ingredients! These sweet and crunchy clusters are perfect for holidays, parties, or anytime you need a delicious treat in minutes.

- 1 (11-ounce) bag butterscotch chips
- 1/2 cup creamy peanut butter
- 1 tablespoon unsalted butter
- 1 (5-ounce) can chow mein noodles
- 1 cup halved peanuts or cashews
- 1/2 teaspoon vanilla extract
- Pinch of salt (optional but recommended if using unsalted nuts)
Instructions
- Line two baking sheets with parchment paper.
- In a medium saucepan set over low heat, combine the butterscotch chips, peanut butter, and butter. (*see notes below)
- Stir constantly until the mixture is completely melted and smooth.
- Remove the saucepan from the heat and stir in the vanilla extract (and salt, if using).
- Gently fold in the chow mein noodles and halved nuts until everything is evenly coated.
- Drop spoonfuls of the mixture onto the prepared baking sheets.
- Let the haystacks set at room temperature until firm, or refrigerate for 10–15 minutes to speed things along.
Notes
Optional Microwave Method
If preferred, the butterscotch chips, peanut butter, and butter may be melted together in a microwave-safe bowl at 50% power, stirring every 20–30 seconds, until smooth.
