Homemade enchilada sauce for the chicken and cheese enchiladas we had for dinner tonight. I cheat a little when I make this sauce by starting with chili powder instead of the more authentic method of using dried chiles. Fun fact: before I blogged about food, and gardening, and making stuff, I was a biologist. Specifically, a conservation biologist. I still am at heart. Also, I wasn't always a mountain dweller. I spent years living in the very far southern tip of coastal Florida, and also the coast of Georgia. I still love the swamps and wetlands, the beaches, the mangroves, and yes, even the alligators. The Earth and all of her creatures are my first loves ❤ All of this to say, Happy Earth Day 2021. We've all been having a rough go of it, but I know that together we can help to heal and restore our planet. Our home. We're all in this together. #earthday #earthdayeveryday

Dessert for dinner on this fine spring evening! Strawberry Almond Buckle with the first of our local strawberries. I know some people like a streusel topping on their fruit buckles, but I am a dessert minimalist and like mine sans streusel and with just a scoop if vanilla ice cream.
